Soya dal

The first recipe to cook soybeans Indian style is a classic, dal. First of all, cook tur dal and soy flakes in 250ml of water, add tomato pieces to it, and mash well. Add curry leaves, salt, green chilies and coriander leaves, and mix well. Seasoning can be done with chilies and mustard seeds.

Soya dosa

The next recipe is dosa, which is very similar to crepes, and can be eaten both for breakfast and Supper.

Wash fenugreek, rice and soy dhal, and soak in water to immerse the mix. When wet, grind the mix, add salt, and ferment overnight. Make dosas on a tawa with this batter.

Soya idli

Soak black gram dal and soy in water for around 4 hours, and grind to make a fine paste. Add rice semolina and salt to it, mix and ferment overnight. Make soya idlis with this mix by steaming.

Soya khichdi

Cook soy flakes and rice in water until the rice receives a soft consistency. Add salt, and season with turmeric powder, asafoetida, cumin and pepper.

Soya peas

Cook soya nuggets in salted water, and keep aside. Heat oil, add cumin seeds, and then add ginger-green chili paste, onions and asafetida. Add turmeric powder, tomatoes, coriander powder and chili powder, and cook for 5-10 minutes. Mix curds, milk, gram flour and water. Add green peas, salt, sugar and soya nuggets to the gravy, and simmer for another 2 minutes. Serve hot.

Soya sambhar

Soft cook soy flakes, vegetables and tur dal. Add salt, tamarind powder and sambhar powder to the mix, and cook for 10 minutes. Season with mustard seeds and curry leaves.
