Choose the Right Pineapple

First of all, it is important to choose a pineapple that is ripe to just the right extent. Too firm is not ripe, while too soft is over-ripe. So, you should choose the fruit that is appropriately ripe. The color of the pineapple should not be completely green, but it can be green on some sides. It should have a golden touch at the bottom and also around the sides, which indicates that it is ripe and sweet.

Cutting The Pineapple

· Place the fruit on its side on the cutting board, and slice off its top green crown with a chef’s knife. Now, stand it upright on the board.

· Carefully cut the skin away from the fruit, using top to bottom strokes. Follow the contours of the fruit. The cuts should not be so deep to cut away its eyes. The fruit’s outer edge is the sweetest, and it should be retained for the best flavor. Now, cut off bottom half inch of the pineapple.

· The pineapple you are holding now will be dotted with eyes, and you need to remove them. Use a paring knife to carve them out, either one by one, or a few lined in vertical, horizontal or diagonal lines.

· To make the final cuts, lay the fruit on its side, and cut into ¾ inch rings. If you want, you can cut out the hard core. Otherwise, you can hold the ring by poking a fork on the core, and then eat the sweet edges.
