How to Make Garnish for Meat - 4 Easy and Tasty Ideas

Take some aubergines, cut them into slices and leave them to rest for a while after having sprinkled them with a little salt so they lose their acidity. Then grab some red peppers, clean all the seeds out from inside and slice them into wide strips. Preheat the oven to 200 degrees, and meanwhile, get a suitable baking tray, sprinkle olive oil on the base and place all the vegetables onto it. Then season with salt, garlic, a little vinegar, olive oil and bake them for 50 minutes.

Chestnut purée

To make this delicious cream, first cook the chestnuts so that you can peel them easily. Make an incision in each of them and then place them into a saucepan to boil. After 10 minutes, take out the chestnuts in stages, whilst leaving the rest submerged in boiling water. Now you can start to peel them by removing the tough outer skin until you reach the thin innermost layer, until the chestnut is clean. After that, put them all back in the saucepan again and leave them to boil. Add salt and cinnamon, then leave them to cook for about 15 minutes. Then mash the chestnuts with a little milk. Add more or less liquid depending on how thick you want the mixture. Once puréed, you can keep it cold to use it later as a garnish whenever you want.

Caramelised onions and apples

The following garnish that is suggested uses onions and candied apples and is innovative, different and very delicious.

Instructions

To prepare this, you need French onions, apples and brown sugar. First peel the onions and fry them over low heat to brown them a little. When they have browned, add the brown sugar until it melts. Once the sugar has caramelised, add a little water and stir the onions around to pick up all the flavour. To make caramelised apples, peel and slice them into wedges. Use butter to brown them off in a pan. When they have some colour, add two tablespoons of brown sugar and increase the heat to melt the sugar with the apples. Here you have already prepared a delicious side dish. To add a finishing touch, pour the rest of liquid from the pan over the top and sprinkle a little cinnamon.

Roasted potatoes with garlic and parsley

Finally, here's a simple but very delicious garnish recipe of roasted potatoes with garlic and parsley.

Instructions

To make this garnish you'll need:

  • Olive oil
  • Potatoes
  • Parsley
  • Salt
  • Garlic cloves

Preheat the oven to 190 degrees, peel the potatoes and cut them into slices about 3 mm thick. Finely chop the parsley, then crush the garlic cloves in a mortar and pestle with the parsley and a little coarse salt. When you've made a paste, add the olive oil and mix together. Place the potato slices in an ovenproof dish and pour over the mixture of garlic, olive oil and parsley. Place on another layer of potatoes and cover these with the sauce, making sure that it is evenly distributed. Then add a glass of water and half a glass of wine, and leave the garnish to cook for half an hour. After the first 10 minutes, turn the potatoes over so that they cook evenly. Gradually they will be cooked and very tender. This will be at the point where there is no water left and they have become darker.
