Substitute the wheat flour with rice flour or buckwheat flour. Make sure that the buttermilk is also gluten-free: it usually is, but some dairies add modified food starch.

Gluten-free potato egg scramble

Give the classic egg scramble a wholesome and gluten-free twist by adding some potatoes and turning it into a delicious potato egg scramble.

To make this wholesome and nutritious gluten-free breakfast, fry 1 cup of ½ inch potato pieces in a non-stick skillet. After a couple of minutes, add some water and reduce the liquid until the potatoes are tender. Add a whisked egg - or as many as you want - and stir frequently.

To make gluten-free banana muffins, just substitute the plain or all-purpose flour with almond meal. You can make them even healthier by substituting the sugar with homemade applesauce with no added sugar.

Gluten-free polenta

When in doubt or in hurry, you can enjoy a gluten-free breakfast with another old-fashioned classic polenta. Polenta is gluten-free, but before buying it make sure that so are the preservatives: it should say so in the polenta packet levels.

To make the gluten-free polenta for breakfast, boil milk in a pan and then whisk in the polenta. Stir it until it is thick. Add blueberries, almonds and honey to it and enjoy!
