Gluten-free fluffy scones

First of all we'll show you how to make the easy version of gluten-free scones so you know the basic recipe.

Ingredients

  • 1 cup plain flour gluten-free
  • ¼ cup of almond meal
  • ¼ cup of white rice flour
  • 2 tsp baking powder
  • 60ml of cream
  • 125ml milk
  • Some extra milk just for brushing
  • Whipped cream
  • Strawberry jam
  • Salt

Procedure

  1. Preheat your oven to gas 7/ 220˚C/ 440˚F
  2. Line baking paper on a baking tray
  3. Take flours, almond meal, salt and baking powder in a bowl, and combine milk and cream in it to make a dough
  4. Lightly flour a surface and pat out the dough on it
  5. Use a round cutter for cutting rounds from the dough
  6. Place these rounds on the baking tray. The rounds should be touching each other on the tray
  7. Lightly brush the top of the rounds with milk
  8. Bake for 8-10 minutes, until the rounds rise and become golden in color
  9. Break into half while it is still warm
  10. Serve with whipped cream and strawberry jam

Pepper and pumpkin gluten-free scones

Now you know how to make basic gluten-free scones, let's give them a fun twist to add more flavor.

Ingredients

  • ½ cup plain flour gluten-free
  • 250gm steamed, mashed pumpkin
  • 1 cup of brown rice flour
  • 2 tsp baking powder
  • ¼ cup of fine polenta
  • 2 sliced spring onions
  • Sea salt
  • ½ cup of plain yoghurt, Greek style
  • 60ml of olive oil
  • 20g finely grated Parmesan
  • 1 tbsp pumpkin seeds
  • Black pepper, crackled

Procedure

  1. Preheat your oven to gas 7/ 220˚C/ 440˚F
  2. Line baking paper on a baking tray
  3. Mix the flours and the baking powder, and add polenta, salt and spring onions in it
  4. Combine olive oil and yoghurt together, and pour the mixture in the bowl of flours
  5. Use a flat-bladed knife to mix the ingredients in the bowl until you make a dough
  6. Lightly flour a surface and pat out the dough on it
  7. Sprinkle Parmesan, pepper and pumpkin seeds on it
  8. Cut squares from the dough using a knife
  9. Transfer it on the lined baking tray
  10. Bake for 20 minutes, until the squares rise and become golden in color

Gluten-free scones with raspberry jam

Last but not least, this is also a delicious classic that people with celiac disease can now enjoy too.

Ingredients

  • 250g self-raising flour, gluten-free
  • 1 tsp baking powder
  • 50g butter
  • 50g caster sugar
  • 1 medium sized egg
  • 150ml milk
  • One beaten egg
  • 2 tbsp granulated sugar
  • Clotted cream and raspberry jam

Procedure

  1. Pre-heat your oven to gas 7/ 220˚C/ 440˚F
  2. Mix baking powder and flour in a bowl
  3. Rub in butter and mix until it resembles the consistency of breadcrumbs
  4. Pour in the sugar in it
  5. Beat together milk and an egg, and add it to the mixture of flour
  6. Scoop 8 mounds from the mixture and place on a lined baking sheet
  7. Brush a little beaten egg on top of each mound, and sprinkle some granulated sugar on them as well
  8. Bake for 15-18 minutes until they become light golden in color
  9. Remove from the oven and serve with clotted cream and raspberry jam
