The Classic Green Jackfruit Soup Recipe

Ingredients

  • 2 cups jackfruit
  • ½ seeded and cored apple
  • ¼ peeled and diced onion
  • 1 halved carrot
  • 1 ½ cup vegetable broth
  • Olive oil as per requirement

Instructions

  1. Put a saucepan on medium heat, pour little oil in it and let it warm up
  2. Add onion cubes to the warm oil. Sauté for 4-5 minutes until tender
  3. Put cooked onion in a blender, followed by carrot, apple and the vegetable broth
  4. Secure the lid
  5. Blend well starting from low speed, and then continuing to high
  6. Blend for 5-6 minutes, until you can see heavy steam escaping from the lid

Green Jackfruit Chicken Noodle Soup

Ingredients

  • 1 can jackfruit in brine
  • 1 celery stalk
  • 1 carrot
  • 1 onion
  • 1 garlic clove
  • 2 bouillon cubes
  • 2 tbsp oil
  • 1 cup noodles (dry)

Instructions

  1. Open the jackfruit can and drain it
  2. Add it to a bowl, and then add it in 2 cups of boiling water
  3. Add one bouillon cube to it
  4. Let this mixture sit for around 60 minutes. This will let the jackfruit soak in the flavor of the bouillon cube
  5. Switch on the heat
  6. Add 2 tbsp oil in a skillet. Sunflower oil is best, as it has mild flavors and do not interfere with the seasoning

This vegan tortilla soup uses green jackfruit as a replacement for chicken. Add some heat to it by using pasilla chile pepper. Otherwise, chili powder works fine as well.

Ingredients

  • 6 corn tortillas (cut them into ¼ inch pieces)
  • 1 package of green jackfruit (shredded with a fork)
  • 3 tbsp olive oil
  • 1 cup red onion (diced)
  • 2 minced garlic cloves
  • 2 cups of tomato puree
  • 1 tsp chili powder or 1 toasted pasilla chile
  • ½ tsp oregano
  • 4 cups of vegetable broth
  • Salt to taste
  • Diced avocado, crumbled feta cheese or cotija cheese, and sour cream or Mexican crema for garnishing

Instructions

  1. Preheat your oven at 350°F (180°C)
  2. Cut tortilla into thin strips and toss them with 1 tbsp of olive oil
  3. Evenly spread it on a baking tray or cookie sheet
  4. Bake it in the oven for around 20 minutes, or until they become golden brown and crisp
  5. Take them out from the oven, allow them to cool, and keep aside
  6. Place a saucepan on medium heat, pour 2 tbsp of olive oil in it, and let it heat
  7. Add onion and garlic to it, and cook for 5 minutes until soft
  8. Add pasilla chile or chili powder, tomato puree and oregano to it, and cook until it starts bubbling
  9. Add jackfruit and vegetable broth to it, and let it boil on medium heat
  10. Slow down the heat, cover the lid and let it simmer for 20 minutes
  11. Add salt as per taste
  12. While serving, place tortilla strips in a bowl, and pour adequate amount of soup on it
  13. Garnish with crumbled feta cheese or cotija cheese, avocado, and sour cream or Mexican crema
