Chocolate and blueberry cupcakes

The best part is that this low calorie cupcake recipe is one that contains no sugar, which means it can be a good dessert for people with diabetes. To make this low calorie chocolate and blueberry cupcake you will need:

  • 225g (7.9 oz) flour
  • 1 tbsp baking powder
  • 4 tbsp sunflower oil
  • 1 tbsp cocoa powder
  • 40g (1.4 oz) blueberries
  • 1 tsp orange zest
  • 2 large eggs
  • 175ml fresh orange juice

Preheat the oven to 200°C (392°F). Sift together the flour, cocoa powder and baking powder. Beat the eggs and the oil in a bowl, add the orange juice, orange zest and blueberries. Mix everything together gently, the mixture should be left with a lumpy consistency. Grease a bun tray with a little oil and pour the mixture into it, bake for 20 minutes or until golden. Let cool and they will be ready to eat.

Banana cupcakes

This low calorie cupcake, perhaps the healthiest of all, is great for people who want to indulge while on a diet, and who also follow a healthy lifestyle with regular exercise. This recipe contains just 150 calories and to make it you will need:

  • 12 egg whites
  • 30g (1.05 oz) walnuts
  • 8 sachets stevia
  • 1 tbsp baking powder
  • 2 cups oatmeal
  • 100g (3.5 oz) wheat bran cereal
  • 2 ripe bananas
  • 80ml water
  • 6 tbsp unsweetened jam in the flavor of your choice
  • 1 tbsp cinnamon
  • 1 tsp baking
  • 1 dash of vanilla
  • 1 tsp baking powder

First preheat the oven to 200°C (392°F) and put all the ingredients except the oatmeal and wheat bran, in a food processor or blender. Crush up the oatmeal and wheat bran a little and add to the mixture, stirring with a spatula and put the mixture into the bun tray. If you want, you can add some nuts on top. Bake in the oven for about 30 minutes.

Carrot cupcakes

The normal recipe for these cupcakes is quite high in calories, so to be able to enjoy them in a healthier way we give you this low calorie carrot cupcake recipe for which you will need:

  • 2 eggs
  • 1 tsp stevia
  • 1 tsp cinnamon
  • 60ml coconut oil
  • 1 tsp vanilla
  • 2 cups almond flour
  • 2 cups shredded carrots

Preheat the oven to 350°C (662°F). Put all the ingredients in a blender or food processor until mixture is even. Distribute the mixture into a bun tray and bake for 30 minutes.

Strawberry cupcakes

This cupcake recipe is not as low in calories as the previous, but lower than any that you buy in bakeries. For low calorie strawberry cupcakes you will need:

  • 225g (7.9 oz)washed and sliced strawberries
  • 160g flour
  • 80g (2.8 oz) sugar
  • 1 tbsp poppy seeds
  • 1 tbsp vanilla extract
  • 60ml olive oil
  • 1 egg
  • 1 spoonful lemon juice
  • 60g (2.1 oz)wheat flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • 250ml skimmed milk

As with the previous cupcakes, preheat the oven to 200°C (392°F) and prepare the bun tray where you will place the cupcakes. Mix the lemon juice with the milk and let stand. Meanwhile mix the strawberries and sugar together with a fork until it draws out the strawberry juice. In another bowl sift the flour, baking powder, salt and cinnamon. Place the egg, oil, milk with lemon juice and poppy seeds together in a bowl. Add the egg mixture to the flour mixture, stir well and add the strawberries and sugar. Bake for 20 minutes.
