How to Make Sugar Free Dulce de Leche - Best Low-Carb Recipe!

What is dulce de leche?

Dulce de leche, also known as manjar, arequipe, cajeta, confiture de lait, is a traditional Latin American cream used in many different desserts. This cream is mainly made of milk and sugar, so its flavour is sweet with a thick and creamy consistency. It is used in crepes, pancakes, torta fritas (fried bread), alfajores, cookies, flan, and more!

The name 'dulce de leche' translates to 'candy (made) of milk'. Many people compare it to caramel, however they taste very different as caramel is made by slowly cooking granulated sugar and dulce de leche is made by slowly cooking milk and sugar together. This is what gives dulce de leche a creamier and lighter consistency than caramel.

What you will need

Before you start, make sure you have all the ingredients you'll need for this sugar-free dulce de leche recipe:

  • 500 cc of whole milk
  • 150 gr or 3/4 cups of stevia (or your sweetener of choice)
  • 23 gr or a tablespoon well filled with cornstarch
  • 1/2 teaspoon of baking soda

This recipe will make roughly 350g of dulce de leche.

Instructions

Step 1: Mix the milk with your sweetener of choice

In a pot, pour in the milk and your sweetener of choice. Mix it well together.

Step 2: Put it on the stove.

Start cooking your milk and sweetener mixture on the stove. Don't stop stirring!

Step 3: Keep the cornstarch on the side.

Keep the tablespoon of cornstarch in a small bowl next to your pot. Add some of the milk from the pot and stir it well so it mixes in well when we add it into the pot.

Step 4: Add the baking soda.

Once you've been cooking your mixture for about 15min, add the 1/2 teaspoon of baking soda into the same pot and mix.

Step 5: Cook and keep stirring

Slowly, your dulce de leche will start getting thicker and becoming a dark brown color. Don't forget to keep stirring, in this recipe you must always be present and caring for your dulce de leche.

Step 6: Add the cornstartch to the pot.

Once your mixture has a nice dark brown color, you can add your cornstarch to the pot. Keep stirring until it is has a nice and thick consistency.

Step 7: Remove from the stove and let cool down.

Now that your dulce de leche is done cooking, it's time to take it off the stove. Place it into a bowl or container and let it cool down in room temperature. This will also make it have an even creamier consistency. After a couple of hours, your dulce de leche is ready to be enjoyed!
