You'll need:
  • 1/2 onion
  • 2 or 3 walnuts
  • 1 teaspoon of oregano
  • 1 cup of juices from a roast red meat or chicken
  • 1 cup of water
  • 1 branch of thyme
  • Black pepper corns
  • Salt
Steps to follow:

The first thing you have to do in preparing the walnut sauce is to put water and herbs to boil in a large pot on medium heat.

Leave it to cook for a few minutes and then remove the herbs and save the broth in a container or plate.

Put a little oil in a frying pan on low heat to make the walnut sauce.

While the oil heats up, chop the half onion. Once the oil has reached the desired temperature, add it to sauté.

While sautéing the onion you can crush two or three walnuts in the mortar.

In a few minutes, when the onion is golden, add it to the broth reserved earlier, together with the pepper, salt, the roast juices and the walnuts. Leave it to cook for a few minutes to reduce the broth that has been added to it.

Once the broth has been reduced withdraw the pot from the heat and the walnut sauce will be ready to accompany any type of roast meat or pasta. If you prefer a smoother result you can mash the sauce in a food processor. Throw it on top of freshly cooked spaghetti or over a piece of meat and this sauce is sure to please!
