What happens if you reuse oil for frying?

When you leave used oil unstrained, bacteria may feed on the leftover food particles in it, and it becomes anaerobic. Clostridium botulinum may grow in it, which is primarily responsible for causing botulism, a serious form of food poisoning. Stale and old oil may contain free radicals, the molecules that may damage cells and may lead to enhanced cancer risk. In addition, it also affects the quality of your food.

How to reuse oil safely

If you are planning to reuse oil for frying, you should first let it cool down, strain it through a cheesecloth or strainer, and then transfer it into an air-tight container. By doing this, any food particles in it will be removed, and it will remain safe for much longer. It would be better if you keep this container in a refrigerator or freezer, as it will retard growth of bacteria, and you may be able to reuse it for more number of times. Before re-using the oil, check its thickness and color, and make sure that it is not darker, greasier and stickier than normal. If it is, then it is better not to use it.

Possible hazards of reusing oil

If the oil gets too hot very quickly, then it must have accumulated HNE, a toxic substances associated with several diseases, such as Alzheimer’s disease, strokes, Parkinson’s disease, liver disease etc. In some cases, reusing oil may also lead to acidity, heart disease, irritable throat etc. So, if the oil changes color or becomes foamy while heating, then it is better to discard it off and use a fresh batch. You should also not use it if you sense a foul smell coming from it, or if it smells of the last food you fried in it.

So, you may reuse oil for frying, but there are certain restrictions and limitations to it, and you should keep checking it for its quality.
