How Make Puttanesca Sauce - Easy Recipe

Puttanesca sauce is almost synonymous with Italian sauce and it is often associated with spaghetti. What's more, it's not really known as "puttanesca sauce" - but rather as spaghetti alla puttanesca. By the way, if you know Romance language and you're a bit struck by the name, let's talk a little bit about the interesting history of this sauce before moving on to the recipe. The name is translated from Italian as "spaghetti - in the whores' style", which is hardly an endearing name for a dish. However, if you travel back in time to the 19th century and go to Naples, enter the local food and adult amusement shop of Madame Yvette Francese, you would see her newly invented "pasta dish with fish sauce". There are other stories, such as the association of a woman's lady garden with the smell of the sauce (don't panic, it's just the anchovies).

Steps to follow to make this recipe:

The first step to make puttanesca sauce is to pour the oil in a skillet over a medium heat, add some garlic and stir very fast (you have to be careful not to burn yourself or the mix).

Once lightly cooked, add the skinned tomatoes. They must be previously cut or crushed. If the tomatoes do not have much water then add some hot water - about 100 cc of water will do.

After that, add the olives and capers and leave them to cook for about 12 minutes. When you smell that rich aroma, add the anchovies, sugar, oregano and pepper and let the dish cook for 5 minutes. If you want to make a vegetarian puttanesca sauce, leave out the anchovies and add some umami paste.

Try not to stir the sauce so it does not lose the anchovies' rich flavour (if you stir it, you will make the dish lose its taste).

Meanwhile, cook the pasta, hot with salt and a little oil and water.

When cooked, drain the pasta and add 1/5 of the sauce on each portion of spaghetti or tagliatelle.
