How to bake Handvo

Handvo is a baked snack with its origin in India in the state Gujrat. It is a baked dish which is made from a mixture of rice, lentils, sesame seeds and spices. In earlier days when there was no oven, Handvo was prepared in an earthen pot and cooked over low flame. But in modern days we can easily prepare this dish in the oven.

To prepare handvo, rice and various types of dal are grinded very finely and then the batter is prepared from it. Then the batter is put in oven and baked to prepare handvo. In this article we will know in detail how to bake Handvo.

Between 45 & 60 minutes low difficulty
Steps to follow:

The first step to make a delicious Handvo, wash the rice and lentils in water and then soak them in 4 cups of water for at least four hours.


After four hours, drain the water and put them in a blender. Also put the chopped ginger and green chilies in the blender and blend them. Do not put any water in the blender.

When the mixture has a light coarse texture, add yogurt, 1/8 teaspoon asafetida, turmeric, sugar and salt and then blend the mixture again for few seconds. Take out the mixture, pour it in a bowl and let it ferment for 10 to 12 hours.


After 4 hours you can continue making your handvo. Add the shredded lauki / bottle gourd, 2 tablespoons of oil and lemon juice into the mixture and mix well. Now add eno or baking powder to the mixture. This makes the mix fluffy and light.


Grease a baking pan with oil and then put the mixture into the pan. Tap the pan to spread the mixture evenly. Then sprinkle sesame seeds over the batter.


Cover the pan with aluminum foil. Put the pan in an oven which has been preheated for 20 minutes at 350 degrees Farenheit (180 degrees celcius).


After baking the handvo for 20 minutes take it out of the oven. Insert a knife in centre of the baked handvo. If the knife comes out clean then it is baked perfectly and if not then bake it for a few more minutes.


Now heat oil in a small pan and add 2 teaspoons of oil in it. When the oil becomes moderately hot, add mustard seeds and 1/8 teaspoon of asafetida to it. When the mustard seeds start to crackle, turn off the heat. Pour this seasoning on top of Handvo cake and the cut it into pieces. Serve hot with green chutney.
