A light soup is an excellent choice for when you're on a diet and want to eat something that's satisfying but low in less calories. Because vegetables are rich in fiber, you'll feel fuller for longer and without having to eat too much. If you like, you can add skinless, lean chicken to this recipe.

It's important not to add bouillon cubes to this recipe because they have a high salt content and reduce the lightness of the soup.

Begin by thoroughly washing all the vegetables and then dicing them. Also prepare the chicken breast, if necessary, if you've decided to add it. In a large pot, add the carrot, cover it with a little water and bring it to a low boil.

Once the water has begun to boil, add the rest of the vegetables and the chicken (optional), mixing in the remaining water and adding the salt to taste. Leave it to simmer on a low heat until all the ingredients are cooked. This may take approximately 10 minutes once the water has returned to the boil.

Once the chicken is cooked, remove it from the pot, shred it and then return it to the light soup. If you want to add more flavor to this recipe, instead of a liter of water you can add low-calorie chicken broth or vegetable broth. However, make sure to use a light broth to compliment the lightness of the soup.
