How to Make a Mediterranean Chickpea Salad
A chickpea salad is a dish which is rich and appetizing, especially in the summer. It is loaded with nutrients from the legumes and has the wonderful and rich flavour of a salad. The first step to make a Mediterranean chickpea salad is to put water to boil in a saucepan if the chickpeas are dry and you have to boil them. Remember that you must leave them to soak for a few hours before putting them to boil. You can purchase packs of ready-cooked chickpeas so you do not have to go through this step.
You can add to the the egg in the same water for it to boil. This is necessary if you want to serve it with the chickpea salad.
While carrying out the above step, prepare the salad. Firstly chop the lettuce. Do not put too much lettuce as the beans and the other ingredients are heavy. A few leaves which are finely chopped should do the trick. Do not forget to rinse it well.
Add to the lettuce the remaining ingredients. In this case we have listed the most basic ingredients, but you can add any or all those which are to your taste and liking. Add the tuna, chopped onion, tomato, raisins and if you want add nuts or vegetables.
Peel the egg once completely hard boiled and then chop it. Add it to your salad together with the chickpeas. Toss well so all the ingredients are mixed.
Put the salad in the refrigerator for a while. Leave to cool as it is best eaten chilled. Be careful to not leave it in too long, just a few minutes as the raisins and other possible ingredients lose their flavour, texture and characteristics is cooled for a long time.
Add dressing. For this add a few drops of oil, vinegar and a pinch of salt or make honey vinaigrette. It will add a great taste and will now be ready to serve. Add a handful of oregano and, if you like other aromatic herbs, mix any extras to your liking.
