The first step in making this almond flan is to prepare the caramel. It will serve to sweeten the dessert. To do this, boil one cup of water in a saucepan. Add 3 or 4 tablespoons of sugar in a separate saucepan. Using a wooden spoon or spatula, stir until the sugar is completely melted.

Once the sugar has melted, add a spoonful of the water and keep stirring. Keep adding spoonfuls of water until the texture and color becomes characteristic of caramel, a golden color.


Once you have prepared the caramel, you must place it in the mold that you will be using. You only have to distribute the candy into the molds smearing both the base and the walls. Let them cool.


Now, it's time to prepare the mixture for the almond flan. In a bowl, add eggs and whisk them with the help of a manual beater or some electric rods. Then add sugar, ground almonds, milk and a teaspoon of vanilla essence if you want to intensify the flavor and the aroma of the caramel. Mix all the ingredients until you see that they have been fully integrated.

The almond flan mix is ready to go. Carefully pour it in the mold or custard cups and pop them into the oven at a temperature of 190 °C (374°F). You should let them bake following the technique known as a water bath for at least 1 hour.

When that time has elapsed, prod the center of the flan with a stick and see if it comes out completely clean. If so, your almond flan is ready to be removed, otherwise leave it a few minutes more.
