Sponge cake is one of the easiest cakes to make and, whether served alone or with whipped cream and berries, are impossible to resist. There are many recipes and variations of this homemade cake but all are well-known for their simplicity and the fact that they can be made using basic ingredients that we all have at home. The first step to make a fluffy sponge cake is to crack the eggs into a bowl or another big enough container and beat with a whisk or fork.

Add the sugar to the bowl and mix well; you can keep mixing by hand or use a blender.

Add the oil in slowly while stirring the mixture constantly.

Using a fine sieve or sifter, sieve together the baking powder and flour and then add them to the mixture.

The next step is to add in the lemon zest and continue stirring the mixture until you have an even paste.

Make sure there are no lumps in the sponge cake dough, particularly at the bottom of the bowl or container.

Preheat the oven to 180/200°C or 356 to 392°F.

Grease the cake tin with butter or oil and spread a small amount of flour in order to avoid the cake from sticking to the bottom of the tin. You can also use parchment paper if you have some.

Pour the cake mixture into the tin and put it in the oven when hot.

Leave the homemade cake in the oven for about 30-40 minutes, making sure that does not burn.

To find out if it has baked through or if we should leave the cake in the oven for a little longer, use a sharp utensil (knife, fork, skewer...) and stick it into the dough. If it comes out clean, it means that the cake has finished baking. If not, the dough is still raw.
