Also known as capelli D’angelo in Italian, angel hair pasta is one of the thinnest long round pasta noodles available out there. Because it has a tiny circumference and a diameter of just around 0.85mm, it cooks quickly and tastes best with finely chopped meats and vegetables, paired with delicate sauces. It is rod-shaped like spaghetti, and is made in the form of very long strands. Being around in Italy since 14th century, it is very light pasta that goes well with soups and seafood. The first step to make angel hair pasta is to put the all-purpose flour in a mixing bowl, make a crater in its middle and break the 5 eggs in it. Blend the eggs and the flour together with a fork. Once you achieve a doughy texture with the mixture, start kneading it with your hands. If the mixture is not binding completely with the eggs, you can add some water to achieve the desired consistency.

Make a ball from this dough, and dust with a little all-purpose flour. Cover it with a damp cloth or a wet paper towel. Wrap the paper towel and the dough in a plastic wrap, and keep it in the refrigerator for one hour.


Take the dough out of the refrigerator, and take it out of the towel. Cut it into 4 pieces, and take one piece out. Cover the remaining three pieces in the damp paper towel. Dust your pasta machine with some flour, and set it to its widest setting. For instance, if your machine has 1-9 setting numbers, 1 will be its widest setting.


Roll a piece of dough through the machine, fold it in half and do it again. You may need to repeat this many times until you achieve the desired consistency. Set your pasta maker at number 2 setting, and roll the piece of dough through it. Now move on to the next setting, and keep repeating. Gradually, the dough will become longer and turn into a long sheet. Usually, you should stop at 8 number setting, as 9 is quite too thin than needed.

Dust your dough sheet with semolina on both sides, and dust a big sheet pan. Cut the dough sheet to the width of the sheet pan. Run the sheet through the machine’s cutting attachment, and lay it down on the sheet pan you just dusted. Repeat all these steps with all the four pieces of dough. After that, you will have all the dough cut into capelli or angel hair pasta.


If you are not planning to cook the pasta immediately, you may cover it with a damp paper towel, wrap it with a tin foil, and keep it in the refrigerator. When you want to cook it, add some salt and olive oil in a big pot of water, and boil. Let the pasta cook for 2 minutes, and then drain.
