To make Anzac biscuits chewy, the trick is to make sure they don't dry too much and stay moist while and after baking them. Follow the instructions below to make the perfect version.

This recipe is pretty simple and can be made with your kids. The first step to make these chewy Anzac biscuits is to mix the dry ingredients together in a bowl: sugar, oats, flour and coconut.

Meanwhile, you should preheat the oven at 160 degrees Celsius. Add the tablespoons of syrup and butter in a pan and melt them on medium heat. Add two tbps of water too and wait for the ingredients to melt.

Take off the heat and pour the bicarbonate soda in with the wet ingredients. You will notice that it will produce a bit of foam, don't worry about it, it's the normal reaction.

Combine both the dry and the wet ingredients and mix properly. Make sure the dry ingredients are covered with the wet to create a homogeneous mixture. If you see that they are not completely covered and the dry ingredients are not sticking together, heat a bit more butter.

The mixture should have a doughy consistency.

Put some non-stick baking paper on a baking tray. Get a tablespoonful of the dough and roll to make a ball. Place each of the balls on the tray and press them carefully with a fork or hand.

Make sure there is at least 2 inches or 5 cm between them so they don't stick together in the oven when they grow.

Put the tray of biscuits in the oven and let them bake for ten minutes or until they get a golden color.

And here comes another trick for them to be chewy: take them from the oven and let them stand for five minutes in a cool place on the same tray they have been made.
