The most important thing when making this avocado jam recipe is to carefully choose the main ingredient. Go to the store and find ripe avocados. Also, avocados oxidize very quickly, so once you cut them open you should work quickly to cook them to keep them from going bad. To do this, cut and peel it by opening it in half, taking out the pit and, using a spoon and separate the skin.

We should note that the 500 grams of avocado needs to be the weight after it's cut; this is important because you use half the weight of the fruit for the sugar in the avocado jam. Mix both ingredients with some lemon juice and put both ingredients in a saucepan.

Then, put the pan on the stove and let it simmer for about 45 minutes, stirring occasionally. The idea is for the mixture not to be liquid but a homogeneous dough. It should have the consistency of any other jam.

Once this is done, turn off the heat and put the jam in glass, airtight containers to make sure it is well stored and can last longer than usual. As a guideline, we recommend you eat it within 2 weeks.

How long will this jam stay good if refrigerated?

It will generally last 2 weeks, unless you are able to seal it in a jar. In the latter case, it can last much longer.

Hi. This helps me quite many because we have a lot of avocados going to waste around my home area here in Western Kenya. One more question, can Sodium Benzoate be used to preserve the jam for as long as 6 months, or is the heating (pasteurizing) just enough?

Hello- does the avocado jam need to be refrigerated? Or, if treated like other jams I make, able to be stored on the shelf?

Hi Elise,

The sugar will help preserve the avocado, but it is a fruit which oxidises relatively quickly when exposed to the air (you will see it by the avocado going brown). You should refrigerate it to make it last as long as possible.

With other fruit preserves (strawberry, cherry, orange, etc.), although they can last well on a shelf, you should store them in the fridge once they are opened.
