How to Make Banana Ice Cream with Almond Milk

No one can resist to the texture and taste of ice creams. They make up for the best desserts in the summer and some people even enjoy them in the winter. If you're vegan or lactose intolerant, there is no reason why you shouldn't eat ice cream, as nut milks are great to prepare this dessert. Also, in this recipe you won't need to use an ice cream maker, so you'll still be able to make the ice cream even if you don't have a machine.

  • Almond milk
  • Coconut milk
  • Ripe bananas
  • Bowl
  • Spatula
  • Sweeterner
  • Thickener
Steps to follow:

Nut milks are not as high in fat as cow milk, so it is better if you use a mixture of a lower-fat milk and high-fat. This is the reason why we advise you to use both almond milk and coconut milk, since the latter has more fats and will give your ice cream a creamier texture.

Peel the bananas, put them inside a bowl and mash them.

Put the coconut milk and the almond milk in another bowl. Add the sweetener you've chosen (honey, marple syrup...) and the thickener. Mix well.

Add the bananas into the previous mixture and blend well. You can use a blender or food processor so it will have a thicker and creamier texture. You'll have to blend for about 1 or 2 minutes.

Once the mixture is blended pour it into a deep baking dish or plastic bowl. Put the bowl with the mixture in the freezer.

Wait forty-five minutes and check the mix. You'll see that it starts to freeze from the edges. Remove it from the freezer and stir with a spatula. You need to break all the frozen sections. Once you've done that, you can put it into the freezer again. If you want, instead of using a spatula you can use a hand-held mixer or a stick-blender.

You can also give your banana ice cream a different touch if you sprinkle some chocolate chips or add cookie dough into the mixture after the first time you take it out of the freezer.

Keep checking the ice cream every 30 minutes and repeat the process if you see any frozen bits. It will take around 2 or three hours for it to be completely frozen and you'll have to check it every 30 minutes to make sure no ice is produced. Remember that we want the ice cream to have a creamy texture.
