How to make breaded aubergine or eggplants

Steps to follow:


The first step to make breaded aubergine should be wash them well and cut into thick slices.


Then put the aubergine in a bowl with water and salt for one hour to release excess water and to make sure they're not bitter. If you do not have enough time, you can also choose to place the slices on a plate, cover them with salt and wait about 10 minutes for the excess water to come out.


Drain the aubergines and dry them with paper towels so they are not still wet.


Cover the aubergine in flour and then with beaten egg; this way, you get the batter more consistent.


Also, if you want, you can then roll them in breadcrumbs, although this is optional.


In a pan, put plenty of olive oil and when hot, start frying the breaded aubergine. Finally, leave the breaded aubergine to drain on paper towels to absorb excess oil.

a different methode and a very tasty one

slice the aubergine or eggplants into very thin slices. deep in flour and beaten egg , fry both sides only slightly and serve it very hot on a flat plate where brine from pickled cucumbers or similar pickled vegetables is placed in thin layer. deep both sides in the brine and enjoy, add brine as needed. by the way this brine is excellent also with salads
