To make cream of celery soup, you first need to prepare the celery. Remove the ends of the celery, separate the sticks from the bunch, discarding the leaves. Then, use a knife to remove the stringy parts from the celery and wash the sticks in water. Finally, chop the celery sticks into small pieces.
Peel and dice the onion and potatoes. Once all the ingredients are ready, put a pan on the heat and add a good glug of olive oil and the chopped celery and onion. Leave it to cook for a few minutes until the onion becomes transparent.
Next, add the chopped potatoes and stir all the ingredients for 5 minutes using a wooden spoon. Next, add enough water to the pan to completely cover the ingredients. Season with salt and pepper to your taste.
Let it boil gently for at least 40 minutes and, once the mixture has softened and is cooked through, remove from the heat and add the cream and the milk. Now simply purée the mixture in the blender, or using a handheld blender, until it becomes smooth and there are no lumps.
