To make chicken and vegetable stew you have to gently fry the diced chicken. To do this, take a frying pan and add a splash of oil. On medium heat, sweat the chicken on all sides. Put aside for later.

In the same pan, proceed to gently fry the vegetables. We begin with the onion, previously cut in small bits. Once cooked, set aside. Then, slowly cook the carrots, peas, red peppers and potatoes in the pan.

For the mushrooms a more delicate treatment is needed. First these must be washed carefully, removing the remains of earth. When they are properly clean cook them separately. Mushrooms let off a lot of water and can alter the taste of the other food. Use a different pan and when they become soft, remove all the excess water which they have let off.

Add the garlic to the pan with the rest of the vegetables. This was the last ingredient left to fry. Once golden, add a splash of white wine and leave to reduce with the rest of the vegetables. Leave on a low heat for approximately 5 minutes.
