Before you start making these chicken meatballs, you need to prepare the chicken breasts you bought. First, remove the skin and, using a knife, remove any fat. Then cube the chicken and put it in the bowl of the mixer to grind. You can also use a food processor, depending on what you have at home. When you have minced the chicken, put it in a bowl or container.


Now beat the eggs with a whisk in another bowl and chop the garlic to add both ingredients with the minced chicken. Also add the breadcrumbs and mix with a fork. Use your hands to ensure that all the ingredients are properly mixed and you obtain a compact mixture will serve to create the meatballs later. Now you just have to make balls by taking pieces of the mixture and making them into the size you would like.


Once you have all chicken meatballs, put them in a pan with a splash of olive oil and when the oil is heated, fry the meatballs slightly. It is important not to fry them too much, you just need to brown them. When you take them out, put them on a plate lined with paper towels to absorb excess oil, and set aside.


Now it's time to make the sauce which will add a great flavour to the chicken meatballs. It's very easy! Once cleaned, chop the vegetables (leeks, red pepper, green pepper and onion) and cook them over a low heat in a pan with a drizzle of olive oil. When the vegetables are cooked, add the tablespoon of tomato and the chicken broth. Stir all the ingredients, add a pinch of salt and cook for about 10 minutes, so the stock can reduce.


After 10 minutes, we recommend you pass the sauce through the blender to obtain the desired texture and if you want to thicken it a little, you can add a teaspoon of yeast. Pour the sauce back into the pan and add the chicken meatballs so they become impregnated with the whole sauce. Set aside for about 10 minutes and voilà! Now they are ready to be plated and to eat, hope you like them.
