How to Make Chinese Lemon Chicken
Do you love the lemon chicken served in Chinese restaurants and want to know how to make it? The truth is it's not difficult, but the combination of chicken with this citrus fruit is really tasty. Thus, on OneHowTo we want to explain step by step how to make Chinese lemon chicken. You'll love it!
The first step to make Chinese lemon chicken is to clean and fillet the chicken breast if they have not done so at the butcher or market. Remove all traces of fat and / or bone and cut the breast into thin fillets, so you get five or six for each piece. Next, season the sliced chicken breasts.
Then beat the egg in a shallow dish or bowl to batter the chicken breast. Note that some people choose to firstly marinate the chicken in soy sauce or another condiment so it's more flavorful.
After dipping in the egg, dust both sides of the breast with cornstarch or cornmeal, you can use wheat flour although they will be less consistent.
As for the sauce for the Chinese lemon chicken, squeeze a lemon to extract its juice; you will need approximately 6 tablespoons. Mix one teaspoon of cornstarch with 5 tablespoons of cold water. Pour these ingredients along with the vinegar and sugar into a saucepan and bring to medium-high heat.
Stir the mixture and leave on the heat until it boils, when it has turned transparent cook for one or two minutes more and your sauce will be ready.
Then deep fry the chicken you've previously coated with egg and flour. We recommend using a soft oil that does not provide much flavor to frying such as sunflower or canola oil. Make sure it's well browned on all sides so that the interior is also well cooked and, once the chicken breasts are fried, remove them from the pan and place them on a paper towel to remove excess oil.
Finally, you just have to add the lemon chicken sauce, either by putting the chicken in the pan, serve the sauce on top of the breast or in a small bowl on the side. Likewise, you can also choose to do a criss-cross slices across the chicken and insert a few slices of lemon to decorate and give a special touch to our Chinese lemon chicken.
