To make chocolate ganache you will need:

  • whipped cream
  • dark cooking chocolate
  • butter
  • Liqueur if you wish to flavour it

We recommend that you start by breaking up the chocolate so that it is easier to melt. You can do this with your hands or with a sharp knife, being careful not to hurt yourself.

The first thing to do to begin preparing the chocolate ganache is to put the whipped cream in a pot and heat it up over a low flame until it is about to boil. It is very important that you remove it from the heat before it boils.

Then, add it gradually to the bowl containing the chocolate and stir it until the pieces of chocolate have melted. You can use this chocolate ganache as filling for your cakes as well as to cover your cakes prior to the adding the sugar icing.

When the chocolate and the cream are combined, add the butter to make the ganache shiny and give it a creamier texture.
