Made from chickpeas, also known as white chana or kabuli chana, chole masala is one of the most favored recipes among Indian families. Indians can have almost any dish with chole masala, including bhatura, puri, rice etc., but one condition is that it needs to be spicy. Yes, Indians love "masaledar" aka. spicy food. The first thing you need to do in order to make chana masala at home is to , soak the chickpeas in water overnight. Pre-soaking reduces cooking time, and it also means that less water-soluble nutrients are lost due to prolonged exposure to water and heat. If you did not soak the chickpeas overnight, there are methods to quickly soak them too, but overnight soaking is a preferred method over quick soaking.

The day after, it's time to heat oil in a pan and add cumin seeds. Let them sizzle.

Add onion-tomato paste to it and sprinkle a little salt. To make this paste, sautée the onion and tomato along with garlic, green chilies and ginger. After sautéing this paste, you will get thick gravy like a paste.

Cook until the oil starts leaving and moisture starts evaporating.


Add turmeric powder, red chili powder, coriander powder, chole masala powder and anardana powder to it, and mix well. Add the Anardana powder too to give a nice tanginess to the dish.If you don’t have this powder, you can use lemon juice as well.

Chana masala powder is made by dry roasting and grinding a number of Indian spices, and is very effective in giving an aromatic flavor to the dish. You can buy ready-made chole masala from the market, but that does not equate the flavor you can create with freshly ground masala powder.


Cook the mixture until the oil oozes out. This is the time to add the soaked chole and mix well.

Add water to it, and cover the lid on the pressure cooker. Let it cook for 25 minutes.


Turn off the stove, and open the lid when the pressure goes down. Now add a pinch more amchur powder to the cooker and mix well.


Lastly, add chopped coriander or cilantro leaves to it and mix well. Your delicious and spicy chole masala is ready to serve!

You can accompany this delicious recipe with some homemade Naan bread or Bhatura.
