Before starting to prepare the homemade coconut flan, pre-heat the oven at 200ºC (392ºF). Then, prepare the caramel and cover the mold you're going to use to wake the flan with the caramel. You also need to cover the sides, not only the base. You can use any mold that can go in the oven,, even clay pots if you don't have any flan molds. Let it cool down while you prepare the flan mixture.

Now, get a bowl and beat the eggs in it. It's not necessary to totally beat them, simply break them. Then, heat the milk on low heat in a pot, and mix with the condensed milk. If you like, you can make your own condensed milk. Regarding the normal milk, it's better if it's coconut milk, but if you don't have any you can use whole milk, semi-skimmed or soya.

When you've mixed the condensed milk with the common milk, add the eggs and keep stirring. After that add the grated coconut and keep mixing. If you like, you can add a drop of vanilla essence and another drop of coconut essence to make it taste more intensely. If you don't have these ingredients, don't worry, they're not indispensable.

When you've got the coconut flan mix prepared and the caramel has cooled down, pour it in the mold, lower your oven's temperature slightly and double boil in the oven. To do so, put the molds on a tray with high sides and fill it with hot water halfway up the molds. You need to cook the coconut flan in the oven for 30-40 minutes, approximately.

You must pay attention to the oven to control the flan and make sure it doesn't burn. If you need to, let them in for longer. If you need to take them out any earlier, do so too. To know if they're ready, do the toothpick test (stick a toothpick in the flan, or similar. If it comes out clean it means it's ready).

When they're ready you should take them out of the oven and let them cool down until they've reached room temperature. When this happens you can take off the mold and they'll be ready to eat or to store in the fridge until they're going to be served. When served, sprinkle some grated coconut on top to decorate, with some dulce de leche or Chantilly sauce. As you can see, making coconut flan is not complicated at all and the result is delicious.
