First, choose the type of coconut that you fancy. We have proposed to use coconut milk instead of whole milk, as well you will find that this twist adds more flavour to the yogurt. However, if you just want to give a little touch of coconut you can try to use coconut flakes, desicated coconut, or even coconut flavouring. Use the type of coconut that will be more practical and accessible (canned, natural, etc.)

Once you have selected the coconut, toss in a pot a litre of milk and grated coconut. We have proposed 60 grams, but if you really like the coconut you can add more. If you also want to incorporate lemon peel, you should add it to the mixture at this time.

Put the pot on the stove over a mid fire and allow the mixture to warm up for a few minutes. When you see that it starts to boil, it will be time to put out the fire. Next, place the mixture in a bowl or container and let cool in the refrigerator overnight. Remember: do not put the hot mixture in the refrigerator directly, as it may be damaged.
