To make this delicious and healthy cod with onions, it is very important to use good raw materials. Buy good fresh cod fillets from the fishmonger and tell them how you're going to cook it so that the pieces are already prepared for your culinary creations. This step is very important, because the result of the recipe will depend largely on how you have prepared those precious cod loins.


In a skillet, heat a little oil and toss in the sliced garlic and the onion cut into thin strips. Only when the onion begins to be transparent is when we will add the remaining vegetables, that is, the red and green peppers cut into Julienne strips and a lovely peeled ripe tomato. Cook the vegetables over medium heat.


Wash the fresh cod fillets and make sure you remove any remaining water before cooking. Then, coat them in batter - just flour will do - without overdoing it. Ensure the flour has properly impregnated both sides of the cod fillets.

Then, take a pan and heat up some oil. When it's hot, sauté the cod fillets well.


The next step in order to make cod with onion is to ensure that the cod is well coated and sealed. If so, move the fillets carefully to the pan with the vegetables with the help of a slotted spoon.


Pour the oil that's been left from the cod into that pan as well. Take this opportunity to add a pinch of paprika and a splash of white wine to taste. It is also the time to season the recipe and toss in the bay leaf.

Let everything simmer for about 15 minutes until the wine evaporates.


In parallel, we can prepare fried potatoes as a side dish. In this case, don't slice them into wedges; cut them into chips. Fry them in a pan with enough oil. When they are golden, remove them from the heat and serve; they will look good by the side of the fillets or on top of the cod.
