How to Make Creamy Spinach Risotto

The first thing to do to make our delicious creamy spinach risotto is to take the spinach, put it in a colander and wash it with cold water to remove any bacteria and chemical residues. Then peel and chop the garlic into small pieces so that it combines well with the other ingredients.

Put a little oil in a pan and when hot, add the garlic (cook over medium heat to prevent it from burning). When you see the garlic begins to brown, it is time to add the spinach and sauté it with the garlic for about 3 to 5 minutes. Then remove it all from the heat and blend it so that it integrates well with the rice.

Now, peel and cut the onion into small cubes and put it in the frying pan with a little oil (it's not necessary to use a different pan, this way the flavours will be more present). When the oil is hot, add the onion and when golden brown, add the uncooked rice to the skillet; sauté it with the onion for 2 minutes and then pour in the cup of white wine, stirring constantly.

After 2 minutes, add a little water, enough to cover the rice; salt and pepper it to taste and let the rice cook. If you have vegetable stock instead of water, that will make the rice even more flavourful. Control the water level and when you see that it is low, add more to prevent it from burning. When you see that rice has the right texture (about 20 minutes), remove it from the heat.

Add the Taleggio, Gouda or Asiago cheese cut in cubes and stir until it melts.

Let the risotto sit for 5 minutes without touching it so that it gets the texture characteristic of creamy spinach risotto.

Then just sprinkle some grated parmesan cheese on top and enjoy your delicious dish with a creamy texture with very nutritious content, perfect for the whole family. Enjoy!
