Once you have all the ingredients, you can get down to business. Pour the milk in a saucepan over medium heat to bring to the boil and add lemon zest along with a cinnamon stick. Stir well and let cook for 10 minutes. In a bowl add the egg yolks, without the whites, along with the sugar and cornflour and whisk until all lumps are smoothed out. It should be a smooth texture. You could use an electric whisk to beat the contents well and avoid lumps.

Another option is to mix in some biscuit crumbs and then sprinkle some on top. This means that the biscuits are not just mixed into the custard, but also sit on top as decoration. You could also place a whole biscuit at the bottom, instead of sprinkled on top.
