Yogurt is a health friendly, mildly fermented product that contains strains of bacteria that are beneficial for your gut. The quality of milk also improves during the fermentation process. But if you are not a very big fan of dairy products, or if you have intolerance or allergy to dairy, then you can make yogurt with coconut milk as well. The first step to make dairy free coconut yogurt is to arm your microwave oven and let the jars sterilize. To do that, let the oven warm up for around 5 minutes, and turn off the heat when it reaches 100˚F of temperature. Let the light stay turned on so that the oven can stay warm. Take the jars you will be storing your yogurt in, and fill them with boiling water to sterilize them. Let them stand for 5 minutes and then drain. After that, you can wash the jars in the dishwasher to make them clean and sterilized.
Pour coconut milk in a medium size saucepan, and keep whisking until it becomes uniform and smooth. Shake the coconut milk can properly before opening it, so that it achieved uniform consistency all through, and the thicker milk does not settle at the bottom.
Sprinkle agar agar flakes in the saucepan over the coconut milk. Do not stir. If you are using tapioca starch, take 1/3 cup of coconut milk in another bowl and mix starch in it. Whisk properly until all the starch gets dissolved. Then pour this mixture back in the saucepan, and mix.
Place this saucepan on a medium flame stove, and warm until the coconut milk begins to simmer. If you have sprinkled agar agar flakes in your coconut milk, then the flakes will also start melting with the heat. Whisk the coconut milk and slow down the heat. Let the mixture cook on low for 5-10 minutes, while whisking from time to time. If you used agar agar flakes, let them dissolve completely, and if you used tapioca starch, let it thicken the mixture completely before turning off the flame.
Let the milk come to a warm touch, around 100˚F.
Take the probiotic capsule, twist it open, pour its contents into the milk, and discard its casing. Whisk to mix.
Add maple syrup in the mixture, and whisk well.
Pour the yogurt into jars you sterilized earlier, and let it set for 1-2 days. After pouring the yogurt in the jars, screw their lids on and place in the oven. Keep the oven lights on so that the environment stays warm. You may also use a yogurt maker or a dehydrator to let the yogurt set.
Once the yogurt is firm enough to be scooped out, place the jars in the refrigerator and let them chill for 6 hours. As the jars chill, the yogurt tends to become thicker. You will also be able to see a thick white layer on the top of the yogurt, and a yellow translucent layer in the bottom. You may stir the entire yogurt to mix, or scoop off the top thick layer to get the best dairy free coconut yogurt for your family.
