The first step to start to make day of the dead bread is to dilute the yeast in a little warm water and mix with half a cup of flour until it's smooth to create a ball of soft dough. Cover with plastic cling film or a clean cloth and leave it to rise for 20 minutes, preferably in a warm place.

While the dough is rising, take the remaining flour and add it to a bowl or place it on the surface where you'll prepare the dough. Add the sugar, salt, three full eggs, five yolks, butter, and orange zest and two tablespoons of orange blossom water.

Mix everything together and work the dough so that all the ingredients are well incorporated. Once the yeast mixture has rested enough, mix it with the dough, kneading it until both are well blended together.

Then leave it to stand, tightly covered, so that it rises again. Wait until your pan de muerto dough has doubled in size.

Once your pan de muerto or Day of the Dead bread dough has risen, divide the mixture into two and leave a little dough aside for the decoration. Make two large balls and with the remaining dough, make a skull decoration or create a ball in the center with bones coming off it, which is very typical for a pan de muerto.

Then, glaze the bread with some egg white and sprinkle sugar on top.

Grease a baking tray with butter and flour. Place your pan de muerto inside, and then bake in a preheated oven at 200 C (392 F) for about half an hour.

Once ready, allow your day of the dead bread to cool slightly before eating.
