First, to make your sugar-free cupcakes, mix both flours and sift with the aid of a sieve or strainer in order to prevent lumps from forming.

Then, mix the butter with the stevia - or the sweetener of your choice - until it's combined. While a sugar and butter mixture forms a whitish paste, we don't get that texture with diabetic cupcakes but it's not a problem.

Next, add eggs to the above mixture and beat until they are combined. Then slowly add the flour, stirring the mixture continuously until it's homogeneous.

You should also pour the milk into the mixture, preferably in two parts interspersed with the flour to help ensure that the ingredients are blended into the paste. If you want to add flavor or color to your sugar-free cupcakes, now is the time add flavorings or dyes.

Now it's time to pour your cupcake dough into your cupcake tin or paper cases and put them in the oven, which has been preheated to 180°C (356°F). Leave them for about 25 minutes, although you can check if they are cooked by sticking a toothpick or knife into the cakes and making sure it comes out clean.

The first thing you should do is beat the cream cheese with a hand whisk or spoon to get a looser texture. That done, add a teaspoon of liquid sweetener - such as stevia, saccharin or any other sweetener you've used - and continue stirring.

All that's left is to add a few vanilla drops to the frosting for the sugar-free cupcakes in order to flavour this light decoration. As for the amount of vanilla, we suggest you add a small amount of essence and try it until you get the intensity of flavour you're looking for.
