The first step to make Dum Pukht biryani is to cut your chicken into 2 inch small cubes

Marinate the chicken with coriander leaves, chopped green chilles, chili powder, turmeric powder, all spice and yogurt.

Heat oil in a pan, add ground cashew nut, coconut, poppy seeds and ginger garlic paste to it, and mix well so that the dum pukht byriani can get all of the flavors.

Add the perfectly blended tomatoes to this, and fry well. Make sure the tomatoes are fresh, they will give the dish a much better taste.

Add marinated chicken to this mixture, cover the lid, and let it cook until the chicken is completely done.

Take a pan and arrange half of the boiled rice in it.

Top it with the mixture of chicken, and sprinkle nutmeg and mace on it.

Cover with rest of the boiled rice, and top with the mixture of milk and saffron.

Spread brown onion on top, and cover the lid. Let it cook for 30 minutes on low flame, until done. Serve with kachoomar. Enjoy!

Hi there Nidhi,

I would like to ask, as I am a convinced vegetarian but used to love some dum pukht biryani when I ate meat. Would it be possible to use some form of tofu instead of the chicken for this recipe? If so, what is the best type of tofu to use and what would be the preferable cooking method?
