To start preparing homemade marshmallows you must mix the powder gelatin with cold water. Stir until the gelatin has dissolved and leave to stand. Then get a saucepan and pour half of the liquid glucose (keep the other half for later on), the natural water and sugar. Heat it on medium heat and stir from time to time. You must heat it until it boils.

Whilst the ingredients heat and dissolve, pour the gelatin and water in a bowl and place it in a microwave and heat it during 30 seconds. When you take it out, add the rest of the liquid glucose and whip it at a low speed. If you don't have liquid glucose, don't worry, you don't need it and the result will be just as nice. If you don't use glucose you need to get rid of the cold water too.

When the syrup you had on the heat has reached its boiling point, take it off the heat and and put it in a bowl with enough capacity, add the gelatin, water and glucose mix and beat it on low speed for 5 minutes. Then, increase the speed to medium and beat for 5 more minutes. After this time, add vanilla essence and take the speed up. You must beat until the dough is foamy and light, similar to whipped cream.

When you have it, get a bowl or mold and cover it with a little bit of oil or melted butter. But, so it doesn't get too soaked, dampen a clean cloth or absorbing paper with the oil or butter and spread it around the mold. Then, pour the homemade marshmallow dough and sprinkle some icing sugar on top. You should leave it somewhere fresh to let it rest and get the adequate consistence during 5-6 hours.

After the resting time, take the marshmallow out of the mold and sprinkle the other side with icing sugar. When you have sprinkled everything, cut it in any shape you like, cubes cilinders, hearts, etc., and you will have your homemade marshmallows ready. This way they'll be white and you'll be able to use them to make chocolate fondant, for example, but, if you want colored marshmallows you only need to add a spot of colouring liquin in the mix before beating it.
