How To Make Easy Mushroom Pâté

Whether you have picked them yourself or bought them, it is important that the first thing you do is clean the mushrooms with a soft brush, followed by a damp cloth. You should not rinse them with water as they may end up absorbing a lot and losing some of their intense flavor. If the stalks look too dirty or dry, you can peel or cut them with a knife to remove any fragments that cannot be used to make our mushroom pâté.

Once clean, cut the porcini mushrooms and place them in a frying pan with a little butter. Fry to reduce the water content so they are as dry as possible. When ready, remove from the heat and leave to rest for two minutes.

Next, add the sautéed mushrooms to a bowl with the cream, egg, finely chopped ham (optional) and seasoning. Using a food processor, blend all the ingredients in order to make the pâté.

We recommend you season with a pinch of salt, black pepper and nutmeg.

Once you have blended all the ingredients, pour the pâté into a ovenproof mold greased with butter and, before placing in the oven, cover with tin foil.

We will use a bain marie technique in the oven, i.e. place the molds inside another ovenproof container filled with water. That is how we cook the mushroom pâté. Before placing in the oven, check that it has been preheated to 180 degrees Celcius (356 Fahrenheit) and leave to cook for 25 minutes, ensuring the bain marie water does not completely evaporate.

Although the recommended time is 25 minutes, this always depends on the power of your oven. It is therefore advisable to check the pâté to see if it is done by inserting a needle or toothpick. The mushroom pâté is ready when the needle comes out clean.
