How to Make Eggplant Lasagna
Eggplants are very nutritious and can be cooked in various ways to be eaten and enjoyed. This recipe is very easy to make and the whole family will love it. The first step to make eggplant lasagna is to thoroughly clean the eggplants and remove the top and bottom. After cutting the eggplant into thin slices, put them in a bowl with water and salt, this will make them less bitter. Soak for 30 minutes. Afterwards, dry them with paper towels or tea towels.
Heat oil in a pan and brown all the eggplant slices. Do not cook them all at once, do some first, then others. It is very important that they all are well browned. Salt them while they are in the pan.
When all the eggplants are browned, place them on baking parchment in the mold you are going to use. Then put the first layer of eggplants on the bottom and using a spoon, spread a layer of tomato sauce over them. Then add a layer of sliced ham, then a layer of sliced cheese.
Repeat again placing the ham and cheese on top and add another layer of eggplants, a little tomato sauce, and sliced ham and cheese again. Finally, create the third layer with the remaining eggplant slices.
Then crack the eggs into a bowl and add milk, mix in salt and pepper. Whisk it all together and pour it over the entire aubergine cake slowly so that it can absorb it.
Sprinkle grated cheese on top of the eggplant lasagna.
Put the cake in the oven, previously preheated to 180° C (356 °F), and leave it for about 20 minutes. Then insert a fork to test if it is done.
