The first step for making this garlic and parsley sauce is to prepare all the ingredients. Cut a sprig of parsley using a knife and peel and chop 1 to 2 cloves of garlic, depending on the intensity of the flavour you want in the end.

When you have finished, put 100 ml extra virgin olive oil in a bowl suitable for mixing. Then add the garlic and parsley you just chopped. Mix these ingredients for a few seconds so they begin to mix.

Then add a pinch of salt and some black pepper. This step is completely optional, so if you do not like the taste that pepper adds to sauces, do not include it. Whisk all the ingredients until they are a smooth and homogeneous cream.
