You can make gluten-free olive oil bread in a bread maker or by kneading by hand. This recipe is meant to be done by hand because many people with celiac disease may not have a bread maker at home, but can easily be made in the appliance following the instructions.

Remember that wheat is completely prohibited in diets for celiacs, so we will use cornmeal to make our gluten-free bread. There are other gluten-free flours available, but this is the easiest one to find.

The first thing you should do is mix the corn flour, fresh yeast and salt in a bowl or container that's large enough. If you do not have fresh yeast, you can also use a sachet of gluten-free baking powder. To mix the fresh yeast with flour we suggest that you first dissolve it in some warm water.

When well mixed, make a hole in the centre like a volcano, and add warm water and olive oil gradually. Continue stirring until it forms a homogeneous paste. You can do it with a whisk or with bare hands. To manually knead gluten-free bread we recommend that you put a little oil on your hands or flour so that the dough doesn't stick to them.

Now, make a ball with the dough, cover with a damp cloth and let it stand to rest for 45 minutes or 1 hour. The dough should double in size, when this happens, knead it again slightly and make it into the shape of bread. You can make different rolls or one loaf of bread, as you prefer. Place the bread in a mold or, if you don't have one, on the baking tray (covered with baking paper) and cover again with a damp cloth. Now, let it rest for another hour.

Next, heat the oven to 200ºC and put a glass of water in one of the corners to generate steam. If your oven has a specific program for this function, you don´t need not to put the glass of water in. Make a few cuts on top of the gluten-free bread, put it in the oven and let it bake for 40-45 minutes.

To find out if the olive oil gluten-free bread is ready, look to see if it is golden and give it a few light taps on the base, if it sounds hollow it's done. You can sprinkle some cornmeal over or leave it as it is. As you can see, making gluten-free bread is not that complicated and is much cheaper than buying it ready-made. If you're not going to eat it immediately, we recommend that you cut it into slices, if you made one big bread, or take the rolls and cover with foil and freeze.
