First of all, prepare the caramel which will cover the flan mold. Alternatively, you can also use smaller molds. It depends on how many people you're cooking for!

Put a little water in a saucepan and bring to the boil. In another pan, heat up four tablespoons of sugar. Once the sugar begins to melt, gradually add the hot water and stir until it has the right consistency for caramel - make it as thick or runny as you like.

Then, pour the liquid caramel into the bottom of the container or mold(s) that you're going to use to make your homemade flan or egg custard. Make sure that the pan is covered on all sides, moving it around so that the caramel spreads evenly, and let it cool. The texture will change.

At the same time, preheat the oven to 200ºC (390º F) so that it's ready to cook the egg custard.

Once that's done, mix the eggs, milk and sugar in a bowl or container. Beat the mixture well so that all the ingredients are properly blended together. You can do this with a manual or electric whisk, as you prefer.

Once the mixture is ready, pour it into the mold or individual cups and put it in the oven. It needs to be cooked in a bain-marie. Thus, you need to put some water into a baking tray or a larger container mold in which you'll place the flan mold(s).

Leave the flan in the oven for about an hour at moderate heat to cook thoroughly. After that time, poke it with a knife, fork or other pointed object and see if it comes out clean. If it doesn't, leave it a little longer before removing it from the oven.

It's very important to not open the oven until that time has passed, since the flan would crumble and flatten.

Once it's done, take the flan out from the oven and let it cool. Then, you only have to remove it from the mold and put it in the fridge if you want to serve it cooler.
