Jhal Muri is a very delicious, spicy and crunchy evening snack that vendors sell in almost every corner and street of Kolkata. It is a Bengali style Indian food that is authentic yet original. It is a chaat, a snack that will definitely make waters in your mouth. Alive and fresh, it is full of textures and flavors. Light on the tummy and easy to digest, it is nourishing as well as accessible. Jhal Muri is made with puffed rice, a holy grain that is delectable and easily digestible. Jhal Muri is quick and easy to make, and is beautiful to the eyes, nose and tongue. Jhal muri is very much like the Bhel of Mumbai, but without the vermicelli and chutneys. All the strong flavors it possesses come from mustard oil and the Muri masala. This snack is all about how you make it and how well you mix it. Read on this article to know how to make Jhal Muri.

Steps to follow to make this recipe:

The first step to make Jhal muri is to heat 1 tsp of mustard oil in a small pan. Keep the flame on medium heat. Add peanuts to the heated oil and roast while stirring constantly. Within 2 minutes, they will turn lightly brown in color. You can set these roasted peanuts aside.


Now dry roast the puffed rice or Muri for around 3 minutes on medium heat. You should not over-cook the Muri. Make sure that the Muri does not change its color. It should remain white, but roasting will give it some freshness and make it crispy. Take out and set aside.


Add onion, peanuts, tomato, cucumber, potato, green chili and coriander leaves to the roasted puffed rice and mix well with a spoon. You can also toss them in a bowl with a lid. Add some mustard oil to it, along with the Muri masala. Some people prefer adding mustard oil from a pickle for enhanced taste and flavors. You can even make your own Muri masala by combining together 4 tsp powder of roasted cumin seeds, 1 tsp salt, 1 tsp black salt, 1 tsp mango powder or amchoor, 1 tsp red chili powder and ½ tsp garam masala. Mix all these ingredients in a small bowl, and your flavorful Muri masala is ready to be used.


Taste the dish and adjust according to your personal preferences. Add dry coconut pieces and lemon juice to it for garnishing and serve. Remember that this dish has to be spicy and crunchy. But if you are serving it to kids, you can keep the spices to a medium range. Also remember to serve the Jhal Muri immediately after making, as the liquids in it may make it soggy and distasteful. If some guests are coming, you can keep all things ready, but don't mix them. You should mix the ingredients only when you can serve it immediately.
