How to Make Roasted Garlic Butter

This roast garlic butter is a good and healthy way to accompany bread as part of an afternoon snack, or you can use it in your favorite dishes from pasta to meat or seafood. It's very adaptable, and you can make it stronger or lighter according to your preferences.

This is a simple recipe for garlic butter and it only needs 3 ingredients: garlic, olive oil and salt. You do not need high quality olive oil, since you only need it to roast and blend with the garlic. Usually, for each ½ kg (1 lb) garlic you'll get one cup butter.

Preheat the oven to 220º C (430º F). Peel the garlic cloves - you can do it by crushing them with a knife, heating them in the microwave, or soaking them in water - and place them in a large bowl.

Add a tablespoon of olive oil per ½ kg of garlic in the bowl and stir the garlic until the olive oil mixes. Place the garlic on a baking sheet.

Once the oven is heated put the tray with the garlic in the oven. Cook until the garlic begins to darken.

Remove the tray with the garlic from the oven and stir the garlic every 10 or 20 minutes until cooked thoroughly.

Let the garlic cool before starting to make the butter. Process the garlic with a blender or food processor until the butter is smooth. If it is too dry, add a little more olive oil. Also add salt if necessary.
