The first step you'll need to take when making soft caramel candy is to cover a baking sheet with baking paper and apply non-stick spray on it.

At a medium heat, mix cream, butter and salt in a saucepan until the butter melts. Remove from the heat.

In a large saucepan, combine the sugar, corn syrup, and water. Stir until the sugar is evenly moist and forms a thick paste. Clean the sides of the pan with a wet spatula so that there are no sugar crystals outside of the mixture. Insert the thermometer into the sugar mixture. Do not stir after this point.

Put a large pan on a medium-high heat. Let the syrup begin to boil. Do not stir the mix. At first you'll see small bubbles around the edge of the pan that eventually move inwards. At around 160°C (320°F), the syrup will darken slightly and smell like caramel. You can continue to the next step once the candy reaches that temperature.

Turn off the heat. Slowly pour the hot cream into the sugar syrup whilst beating the mix gently. The sugar syrup will triple in size. Stop beating the mix once you've added the whole mixture of cream and butter.

Place the saucepan over a medium-high heat. Let the sweets boil without stirring. The sweets will have a creamy yellow appearance and with time, this will darken to a reddish brown. Remove from the heat when the mix reaches 120°C (248°F).

Quickly add the vanilla and beat the mix. Pour the sweets on the baking sheet. Do not scrape the pot. Leave the tray with the sweets to one side to cool. Leave for at least 2 hours or ideally overnight.

When the sweets have hardened, pull them off the baking paper and place them on a cutting board. Cut the sweets with a very sharp knife.

Wrap each soft caramel candy in buttered paper and twist the ends to close the wrapper.
