Chop the onion and carrot into very thin cubes. Add two tablespoons of olive oil to a preferably non-stick pan and, once hot, add both ingredients. Cook over medium heat for 5 minutes.
Peel and grate the two tomatoes and then add them to the pan to cook with the onion and carrot. Add salt and pepper and also add oregano to taste to give flavour to your vegetables. Cook the three ingredients for 5 minutes.
Add the green beans, the tinned mushrooms which have been drained and rinsed and the peas. Cook all the ingredients for 5 minutes allowing the flavours of your vegetables to merge. In a few minutes, you can enjoy delicious spaghetti with vegetables.
Test your vegetables and, if necessary, add salt and pepper again until you get the seasoning that you want. If the acidity of the tomato is too obvious, you can add half a teaspoon of sugar to the food preparation to enhance its flavour. Turn off the heat once the vegetables are ready.
