How to make stuffed zucchini with prawns

Food is the key to keeping our bodies healthy inside and out. Eating a healthy balanced diet directly affects our health and beauty, and significantly improves our skin and hair. But eating healthy does not mean you have to sacrifice eating delicious food and making tasty recipes. Zucchini, for example, is a very healthy vegetable and you should eat it whenever you want in a number of different forms for healthy and delicious meals. In this article we propose that you make zucchini stuffed with prawns.

  • Ingredients: onion, courgette, shrimp, salt and pepper
Steps to follow:

First wash and dry the zucchini, because we're going to eat the skin. Then cut the zucchini in half. Is better if they're not too big so they cook faster. Therefore, it is always better to make more, smaller zucchini pieces.

Once cut, use a spoon to extract the entire inside part, leaving the skin as a whole container for us to fill. When you've removed all the insides of the zucchini, put the outsides in a baking pan in the oven at 200ºC (392ºF) while you continue cooking. This ensures that the skin will be tender and can be eaten.

Now peel the onion and chop it into small pieces. Then fry it in a pan with olive oil over low heat to prevent it from burning. When it's transparent, add the insides of the zucchini and mix them well to unify the flavours.

Once the two vegetables are combined, add the prawns, peeled and thawed, as well as the salt and pepper to taste. Stir all the ingredients together for a few minutes and lower the heat and leave everything untouched for four minutes.

Remove the zucchini skin from the oven and with a few tablespoons, fill each of them with the mixture of onion, zucchini and prawns. When they are all filled, put the pan back in the oven and lower the temperature to 180ºC (356ºF) and let it bake another 10 to 12 minutes.

Serve two halves per person if it is for a starter and four if it's the main dish. The zucchini stuffed with prawns can be eaten whole, with the stuffing and skin, so you can fully enjoy it and have a simple, healthy and really tasty meal.
