The first step when learning how to make sugar-free muffins is to crack the eggs into a bowl and beat them briskly, with the help of an electric blender if you have one. If you don't have one, beat them well until they form a frothy, fluffy texture.


When the eggs are beaten, add the margarine and beat again. Add the liquid sweetener to this mixture so it gives a sweet touch to your sugar-free muffins.


Sift the flour separately to avoid lumps and then add the yeast into the bowl. Mix it together and then incorporate into the bowl containing the beaten eggs. Now add the lemon zest and mix it all together so the flavour is well distributed throughout the mixture.


When all the ingredients have combined together into an even mixture, pour into muffin cases and place them into the oven for about 25 minutes at 160°C. Once the sugar-free muffins are golden in colour, remove them from the oven and leave them to cool for about 30 minutes.
