How to make tomato soup at home
Homemade soups are one of the most nutritious dishes you can find, as it's completely made with natural ingredients, from vegetable or animal origin, which varies according to the type of soup you want to make. The first step to make this delicious tomato soup is to prepare all the ingredients. To do so, peel and chop the onion, red pepper, garlic cloves and carrot into small pieces. The red pepper doesn't necessarily have to be too big, medium sized is enough.
When everything is nicely sliced, get a pot, add some olive oil in it, pour all the ingredients and poach them. You'll have to do so on low heat, to get the expected result. Season with salt and pepper. Whilst the vegetables are poaching, take the stems off the tomatoes and make two cuts in the shape of a cross in each tomato.
Now, get another pot with enough space for all the tomatoes, fill it with water and let it boil. When the water has boiled, add the tomatoes and let them boil for a minute approximately. It's fundamental that these vegetables are already mature, as they'll be tastier and have a more intense flavour.
Whilst the tomatoes are cooking, add a spoonful of sugar in the vegetables and stir. You must keep an eye on them so they don't burn or stick, so stir them with a wooden spoon from time to time. We use sugar to reduce the acidity in tomatoes, but if you prefer, you can reduce the quantity of tomatoes. Take into account that poaching the vegetables takes time.
When the tomatoes are heated, take them out, let them cool for a while and peel their skin off, you'll see it practically falls off by itself. Then, you should slice them just like you did with the rest of the vegetables, in small pieces. Once the vegetables are poached, add the chopped tomatoes, stir them all, and leave for a couple more minutes, then cover the vegetables with water. The liter of water is approximate, you may need a bit more to cover them.
Once you have covered the vegetables in water, you should leave them for 20 minutes on low heat approximately, raising it to medium heat to make it boil. After this time, you'll see the tomato soup has got a red color to it, characteristic of this traditional plate. Switch the heat off, let it cool a bit and beat everything to get a creamy and soft texture.
Custom in many places is to serve tomato soup with a bit of fried bread on top. So, if you wish, you can cut some bread, fry it and add it to each individual dish. When you have beaten the tomato soup, you just need to serve it. Add the laurel, mint or parsley as decoration in the center or to the side of the plate.
