The first step to make this delicious tomato soup is to prepare all the ingredients. To do so, peel and chop the onion, red pepper, garlic cloves and carrot into small pieces. The red pepper doesn't necessarily have to be too big, medium sized is enough.

When everything is nicely sliced, get a pot, add some olive oil in it, pour all the ingredients and poach them. You'll have to do so on low heat, to get the expected result. Now, get another pot with enough space for all the tomatoes, fill it with water and let it boil. When the water has boiled, add the tomatoes and let them boil for a minute approximately. Whilst the tomatoes are cooking, add a spoonful of sugar in the vegetables and stir. You must keep an eye on them so they don't burn or stick, so stir them with a wooden spoon from time to time. We use sugar to reduce the acidity in tomatoes, but if you prefer, you can reduce the quantity of tomatoes. Take into account that poaching the vegetables takes time.
